INGREDIENTS:

Plain Flour - 1 Cup
Gram Flour - 3 Cups
Ajwain - 1 Tsp
Crushed Cumin - 1 Tsp
Lemon Juice - 2 Tbsp
Salt - 1 Tsp
Turmeric - 1/2 Tsp
Spinach - 3 Cups
Green Chili - To taste
Coriander - 1/2 Cup

PREPARATION
1. In a blender throw in the spinach, green chilli, coriander, lemon juice and 1/2 cup water. Blend this together and then put it through a sift to achieve a green stained liquid. Altogether it should create 1 cup.

2. In a bowl sift the flour, gram flour, turmeric and salt. Add in the crushed cumin and the ajwain by first rubbing it between the palm of your hands to release the aroma.

3. Create a bowl shape in the middle of your dry ingredients to then pour in the 1 cup liquid and knead this together to get a dough shape. Since this is slightly sticky rub some oil onto it and then cover to rest for 10 minutes.

4. After the 10 minutes section it into 6 balls and use flour to prevent the dough from sticking to the surface or you hands. Once they are in 6 evenly sized balls roll them out and then run them through a pasta machine increasing the level each time for the dough to thin out.

5. Run it through the cutting section to get the 'Sev / Semeyan' effect and then fry each side for 2 minutes.

6. Let it cool and enjoy!
