سالاد الویه (یا الیویه) سالادی روسی است و نوعی غذای سرد است که از طبخ گوشت یا مرغ به همراه سیب‌زمینی آب‌پز و سس مایونز و خیار شور و دیگر مواد غذایی درست می‌شود. این سالاد در ایران به سالاد الویه و در اروپا و امریکای لاتین به سالاد روسی معروف است.

Olivier salad (Russian: салат Оливье, Russian pronunciation: [sɐˈlat ɐlʲɪˈvʲjɛ]) is a traditional salad dish in Russian cuisine, which is also popular in many other European countries, Iran, Israel, Mongolia and also in South American countries like Argentina, Brazil and Uruguay. In different modern recipes, it is usually made with diced boiled potatoes, carrots, brined dill pickles, green peas, eggs, celeriac, onions, diced boiled chicken (or sometimes ham or bologna sausage), tart apples and mayonnaise, with salt, pepper, and mustard added to enhance flavor, dressed with mayonnaise.[1] In many countries, the dish is commonly referred to as Russian salad, although this term can connote with Vinegret. Another variation called Stolichny salad (Russian: салат столичный, "capital city salad") exists, and is also popular in culture.

In Russia, Ukraine and other post-Soviet states, as well as in Russophone communities world-wide, the salad has become one of the main dishes on zakuski tables served during New Year celebrations (along with champagne and tangerines).
