Poached Egg Soup // سوپ تخم و ماش مقوی
serves - 6 people

INGREDIENTS:

1/2 Cup Mung beans
1/2 Cup (Olive) Oil
Medium Sized Onion
1 tbsp Minced Garlic
1 tsp Turmeric
1 tsp Black Pepper
3 tbsp plain flour
1/2 Cup Chopped Tomato
1/2 Dried Fenugreek
1L water
1/2 Chopped Carrots
6 Eggs
1 Cup Chopped Potatoes
1 tbsp salt
2 tbsp Chopped Coriander

Yoghurt (optional)

PREPARATION
1. Place 1/2 cup Mung Beans in a bowl with boiling water, 1 hour before you start cooking.
2. Add 1/2 (olive) oil to the pan and place it on medium heat.
3. Add to pan 1 chopped medium sized onion. Fry the onions until they are almost golden brown.
4. Add 1 tbsp Minced Garlic. Fry for 1/2 minute.
5. Add 1 tsp Turmeric.
6. Add 1 tsp, Black Pepper.
7. Add 3 tbsp plain flour. Leave it for 1 minute.
8. Add 1/2 cup Chopped Tomato. Cook for 2 minutes and stir Occasionally.
9. Add 1/2 cup dried Fenugreek leaves. Stir for 1/2 minute.
10. Whisk in 1L water.
11. Add the 1/2 cup Mung Beans prepared in the beginning. Cook for 5 minutes.
12. Add 1/2 cup Chopped Tomatoes. Cook for 5 minutes.
13. Carefully place in 6 Eggs. Leave for 2 minutes.
14. Add 1 cup Chopped potatoes.
15. Add 1 tbsp salt. Leave for 8 minutes.
16. 2 tbsp Chopped Coriander.
17. Turn off flame and Enjoy. Add Yoghurt and coriander if desired.
