INGREDIENTS:

Plain Flour - 2 & 1/2 Cups
Yoghurt - 3 Tbsp
Egg Yolk - 2
Powdered Sugar - 1 Cup
Trex Butter - 3/4 Cup
Cardamom - 1 Tsp
Saffron - 1/2 Tsp
Baking Powder - 1 Tsp
Egg Yolk - 1
Pistachio - 2 Tbsp
Powdered Sugar - 1 Tsp

PREPARATION
1. Start off by grinding the saffron with a pinch of sugar until it is powdered. Spoon it into a small pot and add 1 tbsp of boiling water. Stir this well.
2. Take the yoghurt and mix in the baking powder. Let this along with the brewed saffron rest for 5 - 10 minutes.
3. Mix the trex butter and powdered sugar together, then once the 10 minutes have passed pour in the brewed saffron with the cardamom. Mix.
4. Throw in the 2 egg yolks and mix again following it up with the mixture of yoghurt and baking powder.
5. Finally knead in the plain flour until a dough is formed and let this rest in the kitchen for 10 minutes.
6. When the 10 minutes have passed roll out the dough and section it into 8 pieces. Roll them into small balls and design them as shown in the video.
7. Lay them out on a tray lined with parchment paper, and coat them in a mixture of 1 egg yolk and powdered sugar.
8. Place them in the oven for 12 - 15 minutes on 170 Celsius.
9. When the time it up take them out of the oven and let them cool slightly. Dab some honey or syrup in the centre and sprinkle pistachio powder over top.
