INGREDIENTS:

Parsley - 1 Cup
Coriander - 1 Cup
Dill - 1 Cup
Spinach - 1 Cup
Leak - 1 & 1/2 Cup
Oil 1 Cup
Saffron - 1 Tbsp
Garlic - 6 Cloves

Decoration:

Noruzi fish (video on our channel)
Dill - Few Stems
Tomatoes - 6
Almonds - 4 Tbsp


PREPARATION
1. Mix all the greens together in a bowl for later use. (Leak, Parsley, Coriander, Spinach and Dill)
2. In a large Pan boil 5 Litres of water and add in the Salt. Let this come to a boil and ladle in the rice. Boil the rice for 8 minutes.
3. After 8 minutes add in the bowl full of greens and the garlic. Let this bowl for another 2 minutes and drain the rice.
4. Take a small saucepan and add some oil. Place 5 ladles of rice in the pan pouring over the saffron dyed water (1/2 Cup) and 4 Tbsp heated Oil. Create holes over the rice for the heat to distribute well and cook everything. Set that aside.
5. For the rest of the rice - it will be kept white. In the same pan you boiled the rice in, pour some oil and add a tortilla to prevent the rice from sticking to the bottom of the pan. Ladle in the remaining rice and pour over the heated oil that is left. Create holes over the rice once again and put a lid over it wrapped in a towel.
6. Both of the pans should have a lid with a towel over it and to help the rice cook put something heavy over the larger pan. Cook them both on high heat for the first 5 minutes and for the remaining 25 minutes on the lowest heat possible.
7. While the rice is cooking you can start preparing the decoration. The 'Nowruzi Fish' is already up and running on our channel. Create the roses as shown in the video, and fry the almonds for 2 minutes to add more flavour.
8. Decorate the rice how you desire and enjoy this delicious dish especially made for the Persian New Year.
