INGREDIENTS:

2 Packets of Filo Pastry
200g Melted Butter
½ Cup Walnut
1/3 Cup Pistachios
1 Tbsp Coconut Flakes
Syrup:
2 & ½ Cups Sugar
2 Cups Water
2 Tbsp Rose Water
1 Tbsp Lemon Juice

PREPARATION
1. Butter the baking tray to prevent the 'nightingale nests' from sticking.
2. Take the Filo pastry and start creating the ‘nests’ as shown in the video – making sure to butter the layers. As you are creating them, lay them out on the tray and then coat them with butter one more time.
3. Spoon in walnuts to stop the thin area on the filo pastry from burning.
4. Place them in the oven for 20 – 25 minutes on 170 Celsius.
5. As the filo pastry in baking start making the syrup by combing the water, sugar, lemon juice and rose water (optional) let this boil on a medium flame for 10 minutes.
6. Once you have taken the pastry out of the oven (while it is still hot) pour the syrup over top and let that soak in.
7. Over the walnuts you can then spoon the pistachios and a small amount of coconut flakes.
8. Let it cool and you can enjoy.
