Kofta Challow is a very popular afghan dish. Challow refers to the white rice which is usually boiled and then steamed. It is basically a meatball and rice dish with wonderful seasoning. It can be the part of your menu on any Dawat.
Ingredients:
For koftas,
* 500 grams minced Beef
* 1 1/2 cup very finely chopped Onion
* 1/2 tablespoon Coriander powder
* 1/2 tablespoon Black pepper powder
* 1 teaspoon Salt
* 1 tablespoon fresh Garlic paste
* 1 tablespoon fresh Green chilies
For curry,
* 1/4 cup Oil
* 1 cup chopped Onion
* 1 tablespoon Garlic paste
* 2 tablespoons tomato paste
* 1 teaspoon Turmeric powder
* 1 teaspoon Salt
* 1/2 tablespoon Coriander powder
* 1 teaspoon Red chili powder
* 1 teaspoon Black pepper powder
* 1/2 cup boiled gram split lentils (Chana dal)
For rice,
* 750 grams Sella rice (washed and soaked in water for 2 hours)
* 3/4 cup Oil
* 1 tablespoon Cumin seeds
* 2 tablespoons Salt
Directions:
For koftas,
* Heat 1/4 cup oil
* Add 1 cup chopped onion
* When onion turns brown, add 1 tablespoon garlic paste
* After a minute, add 2 tablespoons of tomato paste
* Cook for a minute and then add 1 teaspoon turmeric powder, 1 teaspoon salt, 1/2 tablespoon coriander powder, 1 teaspoon red chili powder, and 1 teaspoon black pepper powder.
* Give it a stir and add 1 cup water
* Cook for 2 minutes, then add 4 glasses of water (1 liter)
* Make the meatballs and add them to the sauce, make sure the sauce is not boiling
* Cook for 30 minutes in low flame
* Add 1/2 cup boiled gram split lentils (Chana dal)
* Cook for a couple of minutes and it's ready to serve.
For rice,
* Boil 2 liters of water
* Add 1 1/2 tablespoon salt
* Add the rice
*When the rice is 75% cooked, mix 3/4 cup oil, 1 cup of the boiling rice water, 1 tablespoon cumin seeds and 1/2 tablespoon salt. ( mix well so the salt is dissolved )
* Drain the rice water and add the oil-water mixture.
* Put on the lid, steam (dam) the rice for 20 minutes on low flame
* It's ready, enjoy!
