INGREDIENTS:

Dough:

Bread Flour - 3 Cups
Water - 1 Cup
Salt - 1 Tsp
Oil - 2 Tbsp

Filling :

Leek - 500g
Coriander - 1 Cup
Coriander Seed - 1 Tsp
Salt - 1 Tsp
Green Chili - 2 (as many as you want)
Butter - 1 Tbsp
Black Pepper - 1 Tsp

Oil - for frying

PREPARATION
1. In a bowl mix the bread flour and salt. Add the oil and water, knead this until the dough comes together and then section it into even 'tennis balls' - let this rest for 30 minutes.
2. While the dough is resting create the filling by cutting the leek and washing it well. repeating the same step with the coriander. Mix the Leek, Salt, Butter, Coriander, Chili, Black Pepper and Coriander Seed.
3. Once the 30 minutes have gone by assemble the bolani as shown in the video and fry each side for 2 minutes.
4. Enjoy
