INGREDIENTS:

Cherry Tomatoes - 200g
Olive Oil - 3/4 Cup
Coriander 1/2 Cup
Onion - 2 Medium
Lemon Juice - 3 tbsp
Garlic - 1 Tbsp
Tomato Sauce - 3 Tbsp
Salt - 1 tsp
Cumin - 1/2 tsp
Red Chili Pepper - 1/2 tsp
Turmeric - 1 tsp
Coriander Seed - 1 tsp
Paprika - 1 tsp
Bitter Melon - 800g

PREPARATION
1. Cut the bitter melon into circles and add in salt with the lemon juice. Leave this for an hour to get rid of the bitterness.
2. Once the hour has passed rinse the bitter melon and boil it for 10 minutes.
3. As the bitter melon is boiling you can start on the sauce - pour the olive oil into a saucepan and once it is heated add the onion and fry.
4. As the onions are frying add in the garlic, but make sure you drain the bitter melon when the 10 minutes have gone by.
5. After add the spices and brown sugar (optional) with the tomato sauce, and mix. add in the cherry tomatoes and bitter melon. Let this cook for 5 mins on low heat with the lid on.
6. After 5 minutes add in the coriander and then let it cook for another 5 minutes on low heat.
7. Enjoy

Can eat this with naan or rice.
