Ingredients:-

* 500 grams of Bitter Gourd ( karella )
* 250 grams of minced Beef
* 500 grams or 2 cups of chopped onion
* 1 1/2 cup chopped tomatoes
* 1 cup boiled Chana dal
* Oil as required
* 2 tablespoons of julienne cut fresh Ginger
* 2 green chillies ( or as much as you like )
* 1 teaspoon of garlic paste
* 1 teaspoon of ginger paste
* 2 tablespoons of chopped fresh coriander
* 1/2 teaspoon of garam masala powder
* 1/2 teaspoon of turmeric powder
* 1 teaspoon of cumin seeds powder
* 1/2 teaspoon of black pepper powder
* 1/2 teaspoon of red chili powder
* 1 teaspoon of dry coriander powder
* 1/2 teaspoon of fennel seeds powder
* 4-5 cloves
* salt to taste

Directions:-

* Wash the bitter gourds and dry them. Make sure that they are totally dried because if there is any water remained, it will turn it too much bitter and it won't taste good.
* Cut both ends and then cut in half vertically and horizontally.
* Remove all the seeds and white parts.
* Julienne cut as shown in the video.

* Heat four tablespoons of oil in a pan and sauté the onions in it, then take out the onions and put it aside.
* In the same pan, heat another four tablespoons of oil and cook the bitter gourds until brown

* After cooking the bitter gourds, wash the utensils or use another one otherwise the bitter flavor will be transferred to all of the ingredients.
* Heat six tablespoons of oil, add ginger and garlic paste and cook for a minute.
* Add the meat and cook until golden brown.
* Add the turmeric, cook for a minute.
* Then add the cumin seeds powder, red chili powder, coriander powder and black pepper powder, add a little water too.
* Cook for two minutes and add julienned ginger, green chili and tomatoes.
* Put the lid on and let cook until the tomatoes are soft.
* When the tomatoes are cooked, add the fennel seeds powder, cloves and garam masala powder with a little water.
* Let it cook and then add the boiled chana dal, sautéed onion and cook for one minute.
* Add the salt and mix it, make sure that the oil has oozed out and there isn't any water in it before adding the fried bitter gourd or karella.
( do not put on the lid while cooking the bitter gourd )
* Cook for one or two minutes.
* Turn off the flame and add the chopped fresh coriander.
* Serve and enjoy.
